Ingredients
  

For the Chicken
  • 2 pieces chicken breasts Can substitute with chicken thighs or other meats like pork or tofu.
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
For Serving
  • 2 cups cooked rice Jasmine or basmati rice works best.
  • Chopped parsley for garnish (optional)

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix honey, Dijon mustard, soy sauce, olive oil, salt, and pepper.
  3. Place chicken breasts in a baking dish and pour the sauce over them.
Cooking
  1. Bake for 25-30 minutes until chicken is fully cooked.
Serving
  1. Serve the chicken over cooked rice and garnish with chopped parsley if desired.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the microwave or stovetop. Let chicken marinate for more flavor if desired.
