Preparation
- In a bowl, combine honey, soy sauce, vegetable oil, garlic powder, grated ginger, salt, and pepper.
- Add diced pineapple to the marinade.
- Place chicken breasts in the marinade and let sit for at least 30 minutes (or overnight for more flavor).
Grilling
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade, letting excess drip off.
- Grill chicken for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F.
- In the last few minutes of grilling, add the marinated pineapple to the grill to caramelize.
Serving
- Serve the grilled chicken topped with grilled pineapple and garnished with chopped green onions.

Notes
For extra flavor, marinate the chicken overnight. Make sure your grill is hot before placing the chicken on it to create nice grill marks. If you don't have fresh pineapple, canned pineapple can work as well, just drain it well.
