  • 1 lb ground chicken Can substitute with ground turkey
  • 1 cup breadcrumbs Use Italian seasoned for added flavor
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese Use freshly grated for better melting
  • 1/2 cup marinara sauce For topping the meatloaf
  • 1/4 cup fresh parsley, chopped Can substitute with basil or oregano
  • 1 egg
  • 1 teaspoon garlic powder Sautéing fresh garlic can enhance flavor
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, shredded mozzarella, chopped parsley, egg, garlic powder, Italian seasoning, salt, and pepper.
  3. Mix everything until well combined — your hands are the best tools here!
  4. Shape the mixture into a loaf and place it in a baking dish.
  5. Generously spread marinara sauce over the top of the meatloaf.
  6. Sprinkle extra breadcrumbs on top for that lovely crunch.
Baking
  1. Bake in the preheated oven for 45-55 minutes. You'll know it's done when the internal temperature hits 165°F (74°C).
  2. Let it rest for a few moments before slicing — this allows the juices to redistribute for a perfect slice.

Notes
