Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, shredded mozzarella, chopped parsley, egg, garlic powder, Italian seasoning, salt, and pepper.
- Mix everything until well combined — your hands are the best tools here!
- Shape the mixture into a loaf and place it in a baking dish.
- Generously spread marinara sauce over the top of the meatloaf.
- Sprinkle extra breadcrumbs on top for that lovely crunch.
Baking
- Bake in the preheated oven for 45-55 minutes. You'll know it's done when the internal temperature hits 165°F (74°C).
- Let it rest for a few moments before slicing — this allows the juices to redistribute for a perfect slice.
