  • 400 g spaghetti Can substitute with whole wheat pasta or spiralized veggies.
  • 6 cloves garlic, thinly sliced
  • 1/3 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes For a spicy kick.
  • 1/4 cup fresh parsley, chopped For garnish.

  • to taste Freshly ground black pepper To season the pasta.

Method
 

Cooking Pasta
  1. Bring a large pot of salted water to a rolling boil.
  2. Add the spaghetti and cook according to package instructions until al dente.
Preparing Garlic Oil
  1. While the pasta is cooking, heat the extra virgin olive oil in a large skillet over medium heat.
  2. Add the sliced garlic and sauté until fragrant and golden, about 2-3 minutes.
  3. Stir in the red pepper flakes.
  4. Reserve about 1/2 cup of pasta cooking water before draining the spaghetti.
Combining Pasta and Sauce
  1. Add the drained spaghetti into the skillet with the garlic oil and toss well.
  2. Use the reserved pasta water as needed to create a silky sauce that clings beautifully to the pasta.
  3. Season with salt and freshly ground black pepper to taste.
  4. Toss in the chopped parsley.
Serving
  1. Serve immediately, topped with grated Parmesan cheese if desired.
