Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Toss in the diced onions and bell peppers, sautéing them until they’re softened and fragrant—about 5 minutes.
  3. Stir in the minced garlic and let it cook for another minute.
  4. Add the diced chicken and sliced sausage, cooking until browned; about 5-7 minutes.
  5. Pour in the diced tomatoes, chicken broth, and Cajun seasoning, stirring well.
  6. Once it comes to a lively boil, stir in the pasta.
  7. Reduce the heat, cover, and let it simmer for about 15 minutes, until the pasta is cooked and most of the liquid is absorbed.
  8. Fold in the shrimp and cook for another 5 minutes until they turn pink and opaque.
  9. Season with salt and pepper, then garnish with chopped green onions before serving.
