  • 1 medium sweet onion, chopped Chop small for better blending with other ingredients.
  • 2 tbsp extra virgin olive oil For sautéing the vegetables.

Preparation
  1. Start by preparing your ingredients. Slice the beef into thin strips or use pre-sliced beef. Chop the mixed bell peppers and sweet onion into small pieces.
Cooking
  1. Heat the extra virgin olive oil in a skillet over medium heat. Add the chopped onions and bell peppers and sauté for about 5 to 7 minutes until softened.
  2. Increase heat to medium-high and add the sliced beef to the skillet. Season with salt and pepper, cooking until browned for about 3 to 5 minutes, stirring frequently.
  3. Reduce heat to low, place provolone cheese slices over the beef and vegetable mixture, and cover the skillet to melt the cheese, about 2 to 3 minutes.
  4. Assemble roll-ups by spooning the beef and cheese mixture onto each tortilla, rolling tightly from one end to the other.
  5. Return the roll-ups to the skillet, seam-side down, and fry over medium heat for about 3 to 4 minutes until golden brown on all sides.
