- In a small bowl, combine the soy sauce, cornstarch, brown sugar, and chili flakes. Mix until the cornstarch is fully dissolved, then set this mixture aside.
 - Drizzle sesame oil in a large skillet over medium heat. Add the minced garlic and grated ginger, cooking until fragrant.
 
Cooking
- Add the ground turkey to the skillet, breaking it up into small chunks. Cook until there’s no raw pink color left.
 - Pour in the soy sauce mixture, keeping the heat high. Stir for another 2 minutes until the sauce turns golden brown and starts to thicken (add a tablespoon of water if it becomes too thick).
 - Toss in chives, reserving some for garnish, and turn off the heat.
 - Top with sesame seeds and any remaining chopped chives. Serve hot over rice and alongside your favorite steamed vegetables.
