  • 2 cups cooked chicken, shredded Rotisserie chicken works well as a substitute.
  • 1 cup uncooked white rice Brown rice may be used; adjust cooking time.
  • 1 can cream of chicken soup Can substitute with cream of mushroom soup.
  • 1 can chicken broth
  • 1 cup frozen mixed vegetables Customize with leftover veggies if desired.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup shredded cheddar cheese Other cheese options include gouda or pepper jack.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, uncooked rice, cream of chicken soup, chicken broth, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper until everything is well mixed.
  3. Spread the mixture evenly in a greased 9x13 inch baking dish.
Cooking
  1. Cover the dish tightly with aluminum foil and bake for 45 minutes.
  2. After 45 minutes, carefully remove the foil and sprinkle the cheddar cheese on top, letting it melt beautifully while baking uncovered for an additional 10-15 minutes.
  3. Once golden and bubbly, let it cool slightly before serving.
