  • 1/2 cup granulated sugar For filling
  • 2 large eggs
  • 1/3 cup fresh lemon juice Freshness is key!
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • powdered sugar For dusting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the flour, 1/4 cup sugar, and the softened butter. Mix until crumbly and resembles wet sand.
  3. Press this mixture into the bottom of a greased 9-inch square baking pan, creating an even layer.
  4. Bake for about 15 minutes or until lightly golden.
Filling
  1. In another bowl, whisk together the eggs, 1/2 cup sugar, lemon juice, lemon zest, and salt until smooth and frothy.
  2. Pour the lemon mixture over the warm baked crust.
  3. Bake for an additional 20-25 minutes until the filling is set, but still has a gentle jiggle.
Cooling and Serving
  1. Let cool completely, then dust with powdered sugar before slicing.
