For the fish bites
  • 1 lb white fish fillets (like cod or tilapia) Any firm white fish can be substituted.
  • 2 tablespoons butter For richness.
  • 1 unit lemon Zested and juiced for flavor.
  • 1/2 cup flour For dredging.
  • 2 units eggs, beaten To bind the breadcrumbs.
  • 1 cup breadcrumbs For a crunchy coating.
  • salt and pepper to taste Salt and pepper Essential for seasoning.
For the garlic aioli
  • 1/4 cup mayonnaise Key for the creamy dip.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 teaspoon lemon juice For extra zing.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the fish into bite-sized pieces, about an inch wide.
  3. Melt the butter in a bowl, then mix in the lemon juice, zest, salt, and pepper.
  4. Set up your assembly line: dip each fish piece first in flour, then in beaten eggs, and finally coat it with breadcrumbs.
Cooking
  1. Lay the fish bites on a baking sheet and drizzle with the lemon butter mixture.
  2. Bake for 15-20 minutes or until golden brown.
  3. Meanwhile, prepare the garlic aioli by mixing mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl.
  4. Serve the fish bites hot alongside the garlic aioli.
