Ingredients
  

For the potatoes
  • 4 medium medium potatoes, diced Cut into evenly sized pieces for even cooking.
  • 2 tablespoons olive oil
  • Salt and pepper to taste
For the meat
  • 1 lb ground beef or turkey Can be substituted with plant-based meat for a vegetarian option.
  • 1 packet taco seasoning Follow packet instructions for seasoning.
Toppings
  • 1 cup shredded cheese Cheddar cheese works best, but other cheeses can be used.
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 1 cup chopped lettuce
  • 1/2 cup sliced jalapeños

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Toss the diced potatoes with olive oil, salt, and pepper.
  2. Spread the potatoes on a baking sheet and roast for 25-30 minutes until golden and crispy.
Cooking
  1. Meanwhile, in a skillet, cook the ground meat over medium heat until browned.
  2. Drain excess fat and add taco seasoning. Follow packet instructions to cook until fully seasoned.
Assembly
  1. To assemble the taco bowl, add the roasted potatoes as the base, then top with seasoned meat.
  2. Layer on shredded cheese, tomatoes, lettuce, sour cream, and jalapeños.
  3. Allow each person to customize their own bowl with their preferred toppings.

Notes
