Ingredients
  

For the base
  • 4 lbs potatoes, diced
  • 2 lbs ground beef (or turkey) Can substitute with plant-based alternatives.
  • 1 packet taco seasoning
For toppings
  • 2 cups shredded cheese Consider queso fresco or cotija for variation.
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup sour cream, for serving
  • 1 cup salsa, for serving
  • 1 bunch chopped cilantro, for garnish
  • 1 cup sliced jalapeños, for garnish
  • 1 medium avocado, diced, for garnish

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper on a baking sheet. Bake for about 25-30 minutes until crispy and golden.
  3. In a skillet over medium heat, cook the ground beef until browned and drain excess fat.
  4. Add taco seasoning and a small amount of water to the browned meat. Stir and cook for an additional 5 minutes until fragrant.
Assembly
  1. Layer the crispy potatoes at the bottom of a large serving bowl.
  2. Top the potatoes with the seasoned beef, black beans, and corn.
  3. Sprinkle with shredded cheese and return to the oven for another 5-10 minutes, until cheese is melted.
  4. Garnish with sour cream, salsa, chopped cilantro, sliced jalapeños, and diced avocado before serving.

Notes

Customize spice levels and flavor by adding onions or garlic to the beef. Potatoes should be soaked for 20-30 mins for extra crispiness.
