  • 2 cups cooked chicken breast (shredded, or use rotisserie chicken)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 cloves garlic (minced)
  • 1/4 cup cream cheese (softened)
  • 1 tablespoon olive oil
  • 4 large low-carb tortillas or wraps
  • 1 tablespoon fresh parsley (chopped)
  • Salt and pepper (to taste)
  • 1 handful baby spinach (optional)

Method
 

Preparation
  1. Preheat a skillet or grill pan over medium heat and add olive oil.
  2. Warm the tortillas for 10-15 seconds in the microwave covered with a damp paper towel.
  3. In a mixing bowl, combine the shredded chicken, mozzarella, cheddar, cream cheese, minced garlic, parsley, salt, and pepper. Mix thoroughly.
Cooking
  1. Divide the chicken mixture among the tortillas, placing about 1/2 cup in the center of each and roll tightly.
  2. Place the wraps seam-side down in the skillet and cook for 2-3 minutes per side until golden brown and cheese is melted.
  3. Remove from the skillet, slice diagonally, and serve hot.

Notes

Serve with your favorite dipping sauces like ranch or marinara. Adding a side salad or fresh veggies makes for a balanced meal. Store leftovers in an airtight container for up to 3 days.
