  • 1 ripe mango, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup cilantro, chopped Can substitute with parsley or mint.
Dressing
  • 1/4 cup lime juice
  • 2 tablespoons honey Maple syrup can be used for a vegan option.
  • to taste salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the shredded cabbage, grated carrots, diced mango, diced red bell pepper, and chopped cilantro.
  2. In a smaller bowl, whisk together the lime juice, honey, salt, and pepper.
  3. Pour the dressing over the slaw mixture and toss gently to combine until well-coated.
  4. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Notes

This slaw pairs nicely with grilled meats, can be used in wraps, and even enjoyed on its own. Store leftovers in an airtight container; best consumed within 2-3 days. Avoid freezing.
