Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss together the chopped rhubarb, olive oil, maple syrup, vanilla extract, and salt until the rhubarb is well-coated.
  3. Spread the mixture evenly on a baking sheet.
  4. Roast in the preheated oven for 15-20 minutes, or until the rhubarb is tender and caramelized.
  5. Once done, remove from the oven and let it cool slightly.
Serving
  1. Serve warm as is, or use as a topping for yogurt, ice cream, or pancakes.

Notes

Store leftovers in an airtight container in the fridge for up to three days. For freezing, spread on a baking sheet to freeze individually before transferring to a zip-top bag.
