  • 2 cups mashed potatoes (prepared) Can use leftover or freshly made mashed potatoes.
  • 1 cup shredded sharp cheddar cheese Can substitute with mozzarella or gouda.
  • 2 large eggs
  • 1/2 cup all-purpose flour Can substitute with gluten-free flour.
  • 1 tsp salt
  • 1/2 tsp black pepper
  • to taste Oil or cooking spray for frying/baking Use for crispy texture.

Preparation
  1. Gather your ingredients to have everything in one place.
  2. If using fresh potatoes, boil them until fork-tender, then mash with butter and cream until smooth. If using leftovers, reheat until warm.
  3. In a large bowl, combine warm mashed potatoes, shredded cheddar cheese, eggs, flour, salt, and black pepper. Stir until well combined.
  4. Scoop the mixture into portions about the size of golf balls.
Cooking
  1. Preheat your oven to 375°F (190°C) for baking or heat oil in a deep fryer for frying.
  2. If baking, place puffs on a greased baking sheet and bake for 20-25 minutes until golden brown. If frying, immerse in oil until crispy and brown.

  1. Let the puffs cool slightly before serving to enjoy the warm, cheesy goodness.
