  • 3 cups frozen shredded hash browns

Preparation
  1. Preheat your oven to 350°F and generously grease six small oven-safe containers.
  2. In a skillet, brown and crumble the ground breakfast sausage over medium heat, then drain any excess oil.
  3. In a separate bowl, blend together the eggs, cottage cheese, salt, and pepper until smooth.
  4. Layer about ½ cup of shredded hash browns in each bowl, followed by a scoop of crumbled sausage.
  5. Pour the egg mixture into each bowl, filling nearly to the top. Top with about ½ ounce of your chosen cheese.
  6. Place the bowls in the oven and bake for 25 minutes, or until eggs are set and tops are golden.
