Ingredients
  

Meatloaf Layer
  • 1 lb ground beef (85/15 preferred) For best flavor and texture.
  • 1/2 cup plain breadcrumbs To bind the meatloaf.
  • 1/3 cup milk
  • 1 ea egg Acts as a binder.
  • 1/4 cup ketchup For moisture and flavor.
  • 1 tsp garlic powder Adds flavor.
  • 1 tsp onion powder Adds flavor.
  • 1/2 tsp salt To taste.
  • 1/2 tsp black pepper To taste.
Mashed Potato Layer
  • 3 cups mashed potatoes (prepared or leftover) Must be warm.
  • 1/4 cup sour cream For creaminess.
  • 2 tbsp butter For richness.
  • to taste seasoning Salt & pepper
Topping
  • 1 1/2 cups shredded cheddar cheese Can substitute with other cheeses.
  • to taste garnish Fresh parsley Optional for garnish.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and prepare a 9x9-inch baking dish with grease or parchment paper.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
  3. Spread the meat mixture evenly across the bottom of your baking dish. Bake uncovered for about 20-25 minutes.
  4. Warm the mashed potatoes, stir in the sour cream and butter, and season with salt and pepper.
  5. Spread the creamy mashed potatoes over the meatloaf layer.
  6. Sprinkle the shredded cheddar cheese evenly over the top. Bake for another 10-15 minutes until the cheese is melted and bubbly.
  7. Let rest for 5-10 minutes before serving. Garnish with chopped parsley if desired.
