  • 2 pieces chicken breasts
  • 1 piece zucchini, sliced Can substitute with peppers or eggplant.
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste Salt and pepper
  • 1 cup shredded mozzarella cheese Can substitute with feta or goat cheese.
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a well-oiled baking dish, place the chicken breasts.
  3. Add the sliced zucchini and halved cherry tomatoes.
  4. Sprinkle in the dried oregano, basil, salt, and pepper.
  5. Drizzle everything with the olive oil and toss gently to coat.
  6. Bake for 25-30 minutes or until the chicken is fully cooked and the vegetables are tender.
  7. Take the dish out of the oven and sprinkle the mozzarella cheese over the top.
  8. Return to the oven for an additional 5-10 minutes, until the cheese is melted and bubbly.
  9. Serve warm and enjoy!
