Ingredients
  

For the steak marinade
  • 1 lb sirloin steak (about 1-inch thick) Marinate for at least 30 minutes, up to 4 hours for more flavor.
  • 3 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
For the grain base
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice) Choose your preferred base.
Toppings
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • cup feta cheese (crumbled; leave out for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)
For the tzatziki sauce
  • 1 cup Greek yogurt (or coconut yogurt for dairy-free)
  • ½ cucumber (grated and squeezed dry)
  • 1 tbsp fresh lemon juice
  • 1 clove garlic (minced)
  • 1 tbsp fresh dill (chopped)
  • to taste salt & pepper
For the vinaigrette
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp honey (omitting for Whole30)
  • 1 clove garlic (minced)
  • ½ tsp dried oregano
  • to taste salt & pepper

Method
 

Marinate the steak
  1. Mix the marinade ingredients in a bowl, then coat your steak thoroughly. Let it sit for at least 30 minutes, but up to 4 hours if you can spare the time.
Prepare the tzatziki
  1. In a separate bowl, mix together the tzatziki ingredients. Once combined, pop it in the fridge to chill while you continue the rest of the meal.
Whip up the vinaigrette
  1. Whisk all vinaigrette ingredients together in a small bowl. Set aside.
Sear the steak
  1. Heat a skillet over high heat. When it's hot, add the marinated steak. Sear for about 4–5 minutes on each side, depending on how you like your steak cooked. Once done, let it rest for a few minutes, then slice it thinly against the grain.
Assemble your bowl
  1. Start with a base of your choice of grains. Layer on the sliced steak and piled veggies. Garnish with tzatziki sauce and a drizzle of your homemade vinaigrette.

Notes
