Method
Marinate the steak
- Mix the marinade ingredients in a bowl, then coat your steak thoroughly. Let it sit for at least 30 minutes, but up to 4 hours if you can spare the time.
Prepare the tzatziki
- In a separate bowl, mix together the tzatziki ingredients. Once combined, pop it in the fridge to chill while you continue the rest of the meal.
Whip up the vinaigrette
- Whisk all vinaigrette ingredients together in a small bowl. Set aside.
Sear the steak
- Heat a skillet over high heat. When it's hot, add the marinated steak. Sear for about 4–5 minutes on each side, depending on how you like your steak cooked. Once done, let it rest for a few minutes, then slice it thinly against the grain.
Assemble your bowl
- Start with a base of your choice of grains. Layer on the sliced steak and piled veggies. Garnish with tzatziki sauce and a drizzle of your homemade vinaigrette.
