  • 1 teaspoon chili powder Adjust according to your heat preference
  • 4 cups vegetable broth Homemade or store-bought
  • Salt and pepper to taste

Cooking Instructions
  1. In a large pot, heat a drizzle of oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until fragrant and softened—about 3 to 4 minutes.
  3. Stir in the cumin and chili powder, letting the spices bloom for another minute.
  4. Next, add the rinsed black beans, diced tomatoes (with their juices), and vegetable broth.
  5. Bring the mixture to a boil, then reduce the heat and let it gently simmer for 20 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, accompanied by warm tortillas or over a fluffy bed of rice.
