Make Strawberry Compote
- In a saucepan over medium heat, combine the chopped strawberries, sugar, and lemon juice. Cook for 5-7 minutes until the strawberries break down and a syrup forms.
- Allow the compote to cool slightly before using.
Assembly
- Spoon the cooled strawberry compote generously over the layered cheesecake cups.
- Refrigerate for at least 30 minutes before serving.
