Crunch Layer

Strawberry Compote

Preparation
  1. Blend the cottage cheese, Greek yogurt, honey (or maple syrup), and vanilla extract in a blender or food processor until smooth.
  2. In serving cups, layer spoonfuls of the cottage cheese mixture followed by a sprinkle of crushed graham crackers. Repeat until cups are filled.
Make Strawberry Compote
  1. In a saucepan over medium heat, combine the chopped strawberries, sugar, and lemon juice. Cook for 5-7 minutes until the strawberries break down and a syrup forms.
  2. Allow the compote to cool slightly before using.
Assembly
  1. Spoon the cooled strawberry compote generously over the layered cheesecake cups.
  2. Refrigerate for at least 30 minutes before serving.

Notes
