Preparation
- In a pan, melt 2 tablespoons of butter over medium heat. Add in the cooked rice along with optional chicken or veggies.
- Stir in ketchup, soy sauce, salt, and pepper. Heat through for 3-5 minutes until all ingredients are nicely mixed and warm.
- Meanwhile, crack the eggs into a bowl, season with a pinch of salt, and whisk until well blended.
- In a separate pan, melt a little more butter. Pour in the beaten eggs and swirl to spread evenly. Cook until the edges are set but the center is slightly runny.
Assembly
- Spoon the flavorful rice mixture in the center of the omelette. Carefully fold the sides over the rice.
- Slide it onto a plate and drizzle with ketchup or demi-glace before serving.

Notes
For an extra fluffy omelette, add a splash of milk to the beaten eggs. Consider adding hot sauce or sriracha for a kick. Omurice is versatile; feel free to use brown rice or quinoa for healthier variations, or tofu scramble for vegan options.
