  • 1/4 cup ketchup For serving; can adjust based on preference.
  • 1 tablespoon soy sauce For seasoning the rice.

  • 2 tablespoons butter For cooking the rice and omelette.
  • to taste Demi-glace (for topping, optional) Adds richness if desired.

Preparation
  1. In a pan, melt 2 tablespoons of butter over medium heat. Add in the cooked rice along with optional chicken or veggies.
  2. Stir in ketchup, soy sauce, salt, and pepper. Heat through for 3-5 minutes until all ingredients are nicely mixed and warm.
  3. Meanwhile, crack the eggs into a bowl, season with a pinch of salt, and whisk until well blended.
  4. In a separate pan, melt a little more butter. Pour in the beaten eggs and swirl to spread evenly. Cook until the edges are set but the center is slightly runny.
Assembly
  1. Spoon the flavorful rice mixture in the center of the omelette. Carefully fold the sides over the rice.
  2. Slide it onto a plate and drizzle with ketchup or demi-glace before serving.
