  • 1 pound chicken thighs, cut into pieces Thighs stay juicy and flavorful.
  • 2 cups cooked rice Using day-old rice works best.
  • 1/2 cup honey
  • 1/2 cup BBQ sauce Use your favorite brand.
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish Adds freshness to the dish.

Method
 

Cooking
  1. Heat olive oil in a large pan over medium heat.
  2. Toss in the chopped onion and minced garlic. Sauté until fragrant and the onions are soft, about 3-4 minutes.
  3. Introduce the chicken pieces to the pan, cooking them until they’re beautifully browned on all sides.
  4. Pour in the honey and BBQ sauce, stirring well to coat each piece of chicken.
  5. Allow the mixture to cook until the chicken is cooked through and the sauce thickens, about 10 minutes.
  6. Add the cooked rice, mixing it all until every grain gets a lovely hug from the sauce. Heat through until everything is warm.
  7. Taste and season with salt and pepper as needed. Serve it up in bowls garnished with chopped green onions.

Notes
