  • 1 can (14.5 oz) diced tomatoes No need to drain.
  • 1 tbsp Cajun seasoning Adjust to taste.
  • 1 tsp paprika Smoked paprika can enhance flavor.
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese for garnish Enhances creaminess.
  • 2 tbsp olive oil

Cooking Steps
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add the sliced sausage, onion, and bell pepper; sauté until nicely browned, about 5-7 minutes.
  3. Stir in the minced garlic and continue cooking for another minute until fragrant.
  4. Pour in the diced tomatoes, chicken broth, heavy cream, and season with Cajun seasoning, paprika, salt, and pepper. Bring to a boil.
  5. Once boiling, stir in the uncooked penne pasta. Lower the heat and let it simmer, stirring occasionally, until pasta is tender—about 10-12 minutes.
  6. Remove from heat and sprinkle in the grated Parmesan cheese, stirring until melted and creamy.
