Main ingredients
  • 12 oz penne or rotini pasta Both shapes work beautifully.
  • 1 tbsp olive oil
  • 14 oz kielbasa sausage, sliced
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1 1/2 cups shredded cheddar or mozzarella cheese
  • to taste Salt and pepper
  • 1/2 tsp smoked paprika Optional; adds nice depth.
  • Fresh parsley, for garnish

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sliced kielbasa and cook for 4–5 minutes until it’s beautifully browned.
  3. Toss in the minced garlic and chopped onion; sauté for 2 minutes until fragrant and the onion turns translucent.
  4. Pour in the chicken broth and heavy cream; bring to a gentle simmer.
Cooking
  1. Add the pasta, stir gently, cover, and allow it to simmer for 10–12 minutes, stirring occasionally until al dente.
  2. Stir in the Parmesan cheese until it melts, then add the shredded cheddar or mozzarella.
  3. Season with salt, pepper, and smoked paprika, if using.
  4. Garnish with fresh parsley and serve hot.

Notes

For thicker sauce, simmer longer. Use red pepper flakes for heat. Add vegetables like spinach or peas in the last few minutes of cooking.
