  • 2 cups mashed potatoes leftover is perfect
  • 1/2 cup grated cheese sharp cheddar or your favorite
  • 1/4 cup green onions chopped
  • 1/4 cup breadcrumbs for a crispy texture
  • 1 large egg to bind the mixture
  • to taste Salt and pepper
  • as needed Olive oil or cooking spray for a golden finish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine the mashed potatoes, cheese, green onions, breadcrumbs, egg, and season with salt and pepper.
  3. Form the mixture into small patties, about the size of your palm.
  4. Arrange the patties on a baking sheet lined with parchment paper, leaving space between each.
  5. Spray the tops lightly with olive oil or cooking spray.
Baking
  1. Bake for 20-25 minutes, or until golden brown.
  2. Serve warm as a side dish or snack.
