Overnight Blueberry French Toast

Ingredients
  

For the French Toast
  • 1 loaf 1 loaf of bread (preferably brioche or challah) Use day-old bread for better absorption.
  • 2 cups 2 cups blueberries (fresh or frozen) The more fruit, the better!
  • 8 oz 8 oz cream cheese (softened) Ensure it's softened for easy spreading.
  • 6 large 6 large eggs Room temperature eggs work best.
  • 2 cups 2 cups milk Dairy-free alternatives can be used.
  • 1/2 cup 1/2 cup sugar Adjust sweetness to taste.
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 teaspoon 1 teaspoon ground cinnamon Add nutmeg for extra flavor if desired.
  • 1/4 teaspoon 1/4 teaspoon salt
  • 1 tablespoon Butter (for greasing the dish)

Method
 

Preparation
  1. Begin by greasing a 9×13-inch baking dish with butter.
  2. Cut the bread into cubes and layer half of them evenly across the bottom of your dish.
  3. Spread the softened cream cheese over the bread cubes.
  4. Sprinkle half of the blueberries on top.
  5. Layer the remaining bread cubes over the blueberries, followed by the rest of the berries.
  6. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until smooth.
  7. Pour the egg mixture evenly over the bread and blueberries.
  8. Cover with plastic wrap and refrigerate overnight.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Bake for 45 to 50 minutes until the top is golden and the custard is set.
  3. Let it cool slightly before serving.

Notes
