Cooking Process
  1. Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions. Once al dente, drain and set aside.
  2. In a large skillet, warm the olive oil over medium heat.
  3. Add the diced pancetta to the skillet and let it sizzle away until it’s crispy and golden.
  4. Stir in the minced garlic and cook for about a minute until fragrant—be careful not to burn it!
  5. Add the sweet peas to the skillet, letting them heat through and mingle with the pancetta and garlic.
  6. Toss the cooked pasta into the skillet, ensuring everything is well mixed.
  7. Sprinkle with salt and pepper. A gentle toss should do the trick!
  8. Plate your pasta, generously grating fresh Parmesan on top for that extra bit of flavor.

Notes

This dish pairs well with a simple green salad dressed with lemon vinaigrette and crusty bread for dipping. Add fresh mint or basil for a bright touch, and consider a splash of lemon juice for extra tanginess.
