  • 2 pieces cooked chicken breasts, shredded Rotisserie chicken can be used for convenience.
  • 4 pieces whole wheat tortillas Can substitute with any tortillas or lettuce leaves.
  • 1 cup mixed fresh veggies Use bell peppers, cucumbers, carrots, or any fresh veggies.
  • 1/2 cup creamy peanut sauce Feel free to use different nut butters or dressings as a substitute.
  • to taste salt and pepper Adjust based on preference.

  • as needed lettuce leaves Provides a fresh crunch in each wrap.

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, mixed fresh veggies, and creamy peanut sauce. Stir everything together until the chicken and veggies are fully coated in the sauce.
  2. Lay a tortilla flat on your prepping surface. Place a few crispy lettuce leaves in the center.
  3. Add a generous helping of the chicken and veggie mixture on top of the lettuce.
  4. Fold the sides of the tortilla over the filling, sealing it in, and roll it up tightly from the bottom to the top.
  5. Repeat this process with the remaining tortillas until you have a delicious batch of wraps.
  6. Cut the wraps in half and serve immediately, or wrap in foil for a handy meal on the go.

Notes

Best enjoyed with a side of fresh fruit, crunchy baked chips, or a light salad. Store leftovers in plastic wrap or airtight containers for 2-3 days. Reheat in the microwave for about 30 seconds to 1 minute.
