- In a large bowl, combine the shredded chicken, mixed fresh veggies, and creamy peanut sauce. Stir everything together until the chicken and veggies are fully coated in the sauce.
- Lay a tortilla flat on your prepping surface. Place a few crispy lettuce leaves in the center.
- Add a generous helping of the chicken and veggie mixture on top of the lettuce.
- Fold the sides of the tortilla over the filling, sealing it in, and roll it up tightly from the bottom to the top.
- Repeat this process with the remaining tortillas until you have a delicious batch of wraps.
- Cut the wraps in half and serve immediately, or wrap in foil for a handy meal on the go.
Notes
Best enjoyed with a side of fresh fruit, crunchy baked chips, or a light salad. Store leftovers in plastic wrap or airtight containers for 2-3 days. Reheat in the microwave for about 30 seconds to 1 minute.
