  • 2 slices slices of bread Use any type of bread you like, such as sourdough or whole grain.
  • 2 tablespoons pesto Fresh or homemade pesto is recommended for the best flavor.
  • 2 slices cheese (such as mozzarella or cheddar) Mozzarella and cheddar melt well; you can also try provolone or gouda.
  • 1 tablespoon butter Used for grilling the sandwich.

Method
 

Preparation
  1. Spread pesto on one side of each slice of bread.
  2. Place one slice of bread, pesto side up, in a skillet over medium heat.
  3. Layer cheese on top of the pesto.
  4. Place the second slice of bread on top, pesto side down.
  5. Butter the top slice of bread and cook for 3-4 minutes until golden brown.
  6. Flip the sandwich and butter the other side.
  7. Cook for another 3-4 minutes until cheese is melted and bread is toasted.
  8. Remove from heat, cut in half, and enjoy!
