  • 60 g 60 g reduced-fat cheese: Any melting cheese will work, but mozzarella is classic.
  • 1 tbsp 1 tbsp passata: This is the tomato base that brings the pizza flavor.
  • a few slices A few slices of salami: The crispy bits that add texture and zest.
  • to taste Mixed herbs: Oregano and basil will bring that Italian essence to your dish.

Preparation
  1. Start by evenly spreading the cheese across a non-stick pan over medium heat. Let it melt and start to crisp slightly.
  2. While that’s happening, crack your eggs into a bowl and whisk until smooth. At this point, resist the urge to add salt; the cheese will bring enough salty flavor.
  3. Pour the whisked eggs right over the melting cheese, then cover the pan with a lid. Reduce the heat slightly and let it cook until the bottom is firm and golden — about 5 minutes.
  4. Flip gently using a spatula, making sure to keep the base intact.
  5. Now, spread the passata on top of the cooked side, add those tempting salami slices, and finish with the remaining cheese. Cover again and let it all get warmed through for another few minutes until the cheese is melted.
  6. Finish by sprinkling mixed herbs on top and serve immediately.

Notes

This dish pairs beautifully with a fresh side salad, toasted bread, or a warm baguette for a complete meal. Store any leftovers in an airtight container in the fridge for up to 2 days.
