Ingredients
  

For the Cookie Dough
  • 1 cup pumpkin puree (canned or homemade) Feel free to use fresh pumpkin puree for better flavor.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup butter, softened
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
For the Cheesecake Swirl
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in the pumpkin puree and eggs until fully incorporated.
  4. In another bowl, whisk together flour, baking soda, baking powder, spices, and salt.
  5. Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
Cheesecake Swirl
  1. In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
Baking
  1. Drop rounded tablespoons of cookie dough onto a parchment-lined baking sheet.
  2. Add a teaspoon of the cream cheese mixture on top of each cookie dough ball and swirl with a toothpick.
  3. Bake for 10-12 minutes until set and lightly golden around the edges.
  4. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
