  • 2 tablespoons olive oil For brushing the squash.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash into rings.
  3. Brush both sides generously with olive oil, then season with salt and pepper.
  4. Arrange the rings on a baking sheet in a single layer.
Cooking
  1. Roast in the oven for about 30-40 minutes or until the squash is tender.
  2. Once roasted, use a fork to scrape the inside and reveal the spaghetti-like strands.
