Ingredients
  

For the Turkey
  • 1 whole whole turkey (12-14 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 oranges, zested and juiced
  • 4 cloves garlic, minced
  • to taste Salt and pepper
  • 1 onion, quartered
  • 2 cups chicken broth

Method
 

Preparation
  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, mix together olive oil, rosemary, orange zest, orange juice, garlic, salt, and pepper.
  3. Pat the turkey dry with paper towels and rub the olive oil mixture all over the turkey, including under the skin.
  4. Stuff the turkey cavity with onion quarters.
  5. Place the turkey in a roasting pan and pour chicken broth into the bottom of the pan.
Cooking
  1. Roast the turkey for about 13-15 minutes per pound, until the internal temperature reaches 165°F (75°C).
  2. Baste the turkey occasionally with pan juices.
  3. Once the turkey is done, let it rest for 20-30 minutes before carving and serving.

Notes
