Ingredients
  

Main Ingredients
  • 1 cup frozen brown rice You can use cooked rice to skip thawing.
  • 1 cup riced cauliflower For lower carb, increase cauliflower to two cups.
  • 1 fillet salmon Fresh salmon can be used instead of frozen.
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 egg egg
  • to taste green onions, chopped To serve, for a fresh crunch.
  • to taste salt and pepper

Method
 

Cooking
  1. Warm the sesame oil in a skillet over medium heat.
  2. Stir in the frozen brown rice and riced cauliflower, mixing occasionally until both are warmed through.
  3. Push the rice mixture to one side of the skillet.
  4. Add the salmon fillet in the cleared space and cook until the flesh flakes easily with a fork.
  5. Flake the salmon with a fork and mix it into the rice.
  6. Form a well in the mixture and scramble the egg right in the skillet.
  7. Drizzle in the soy sauce, add the chopped green onions, and season with salt and pepper. Stir everything for one last minute of cooking.
  8. Serve hot and enjoy your Salmon Fried Rice.
