Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper until well-coated.
  3. Spread the sweet potatoes evenly on a baking sheet in a single layer.
Roasting Sweet Potatoes
  1. Roast the sweet potatoes in the preheated oven for about 25-30 minutes until tender and lightly browned.
Cooking Sausage
  1. While the sweet potatoes bake, heat a skillet over medium heat and add the sausage.
  2. Cook until nicely browned and cooked through, about 8-10 minutes.
Making the Sauce
  1. In a small bowl, whisk together the honey and minced garlic.
  2. Pour this mixture over the cooked sausage, stirring to combine, and cook for an additional 2 minutes.
Combining and Serving
  1. Once the sweet potatoes are finished, combine them with the sausage and garlic mixture in the skillet.
  2. Toss gently to coat, then serve warm. Garnish with parsley if desired.
