Ingredients

Pasta and Main Ingredients
  • 8 ounces pasta (your choice, like penne or rigatoni)
  • 1 pound smoked sausage, sliced (any variety you prefer; try kielbasa for a little twist)
  • 2 bell peppers (red and yellow for a pop of color), sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
Cooking Essentials
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
Garnishing
  • Parmesan cheese, freshly grated, for serving
  • Fresh basil, for garnishing

Method

Cooking the Pasta
  1. Begin by boiling water in a large pot. Add your pasta and cook according to package instructions until al dente. Drain and set aside, but don’t forget to reserve a little pasta water; it can help with the sauce later.
Sautéing the Sausage
  1. In a large skillet over medium heat, drizzle in the olive oil.
  2. Add the sliced sausage and cook it until it’s beautifully browned, about 5 to 7 minutes.
Adding Vegetables
  1. Toss in the chopped onion, sliced bell peppers, and minced garlic.
  2. Allow everything to sauté together until the veggies soften, about 5 minutes.
Seasoning
  1. Sprinkle in the Italian seasoning, and give it a generous dash of salt and freshly cracked pepper. Stir to combine.
Combining
  1. Add your prepared pasta to the sausage and veggie mixture, using kitchen tongs to toss everything together.
  2. For extra flavor, you can add a splash of reserved pasta water if needed.
Serving
  1. Dish it out hot, with a sprinkling of grated Parmesan cheese and a few fresh basil leaves to finish.

Notes

Cooking the pasta to al dente is key! It ensures the pasta holds its shape in the dish, especially when mixed with sauces. Allow the sausage to get a nice brown; this caramelization adds so much depth of flavor to your dish. Don’t skimp on the herbs! Fresh or dried, herbs can transform simple ingredients into a well-rounded meal.
