  • 2 tablespoons butter Substitute with Greek yogurt for a tangy twist.
  • 1 tablespoon flour For gravy thickening.
  • 1 serving cheesy mashed potatoes Homemade or store-bought.

Method
 

Cooking the Chicken
  1. Season the chicken breasts generously with salt and pepper.
  2. Heat the olive oil in a skillet over medium-high heat until it shimmers.
  3. Place the chicken breasts in the skillet and sear for about 6-7 minutes on each side, until golden and cooked through (165°F).
  4. Remove the chicken from the skillet and let it rest on a plate.
Making the Gravy
  1. In the same skillet, toss in the minced garlic and sauté until fragrant, about a minute.
  2. Sprinkle the flour over the garlic and mix in, cooking for another minute to create a roux.
  3. Gradually pour in the chicken broth, stirring continuously until the mixture thickens slightly.
  4. Stir in the butter until melted and integrated into the gravy.
Serving the Dish
  1. Serve the chicken breasts atop generous scoops of cheesy mashed potatoes and drizzle the garlic gravy on top.
