Preparation
  1. Start by seasoning the chuck roast generously with salt and pepper.
  2. In a skillet, heat the olive oil over medium-high heat. Sear the roast on all sides until it’s beautifully browned, around 3-4 minutes per side.
  3. Once seared, carefully transfer the roast to your slow cooker.
  4. Layer the sliced onion and minced garlic on top of the roast.
  5. Pour the barbecue sauce and beef broth over everything, covering the meat completely.
  6. Secure the lid and cook on low for about eight hours, until the beef is tender and can be shredded easily.
Serving
  1. Take the roast out, shred it with two forks, and stir it back into the delicious sauce. Enjoy warm!
