  • 1 piece lemon (zested and juiced) Zest only the yellow part to avoid bitterness.
  • 2 cloves garlic (minced) Freshly minced for best flavor.
  • 1 teaspoon dried thyme Can substitute with fresh thyme, double the amount.
  • 1 teaspoon dried rosemary Fresh rosemary can also be used.
  • to taste Salt and pepper Adjust as per preference.
  • to garnish Fresh parsley For added freshness and color.

Preparation
  1. Start by placing the chicken breasts at the bottom of your slow cooker.
  2. In a medium bowl, combine the rice, chicken broth, lemon juice, lemon zest, minced garlic, thyme, rosemary, salt, and pepper.
  3. Gently pour the rice mixture over the chicken, spreading it out evenly.
  4. Cover the slow cooker and set it to low. Cook for about 4 to 6 hours.
  5. Once cooked, give it a gentle stir before serving. Garnish with fresh parsley.
