Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet, scramble the eggs over medium heat until fully cooked. Season with salt and pepper to your liking.
- In a bowl, mix together the scrambled eggs, cheese, and crumbled sausage.
- Lay a tortilla on a flat surface, place a portion of the egg mixture in the center, and roll it up. Repeat with the remaining tortillas.
- Place the rolled tortillas in a baking dish, seam side down.
- Pour the sausage gravy generously over the top of the enchiladas.
- Bake for 20-25 minutes or until heated through and slightly bubbly around the edges.
- Garnish with chopped green onions if desired and serve warm.
