  • 4 large tortillas
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice) You may use a different cheese for varied flavor.
  • 1 cup cooked sausage, crumbled
  • 2 cups sausage gravy Generously pour over the enchiladas.
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, scramble the eggs over medium heat until fully cooked. Season with salt and pepper to your liking.
  3. In a bowl, mix together the scrambled eggs, cheese, and crumbled sausage.
  4. Lay a tortilla on a flat surface, place a portion of the egg mixture in the center, and roll it up. Repeat with the remaining tortillas.
  5. Place the rolled tortillas in a baking dish, seam side down.
  6. Pour the sausage gravy generously over the top of the enchiladas.
  7. Bake for 20-25 minutes or until heated through and slightly bubbly around the edges.
  8. Garnish with chopped green onions if desired and serve warm.
