Ingredients
  

For the Soup
  • 4 pieces jalapeños, diced Remove seeds for less spice.
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup cream cheese Can substitute with reduced-fat or non-dairy.
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup milk
  • to taste salt and pepper Season to liking.
For the Grilled Cheese Dippers
  • 4 slices bread
  • 1 cup additional cheddar cheese For dippers.
  • butter for grilling For grilling the sandwiches.

Method
 

Soup Preparation
  1. In a large pot, over medium heat, add a splash of oil and sauté the diced jalapeños, onion, and garlic until soft and fragrant, about 5 minutes.
  2. Pour in the chicken or vegetable broth and raise the heat until it begins to simmer.
  3. Stir in the cream cheese and milk until they blend together smoothly.
  4. Add the shredded sharp cheddar cheese and stir until it melts into the soup. Season with salt and pepper to taste.
Grilled Cheese Dippers Preparation
  1. Butter two slices of bread and place a slice of cheddar cheese between them.
  2. In a skillet, grill the sandwich until golden brown and the cheese is melted.
Serving
  1. Ladle the soup into bowls and cut the grilled cheese into strips for dunking. Serve warm.

Notes
