Main Ingredients
  • 1.5 lbs 3-4 boneless, skinless chicken breasts
  • 8 oz spaghetti
  • 2 cups shredded sharp cheddar cheese
  • 1 cup fresh bell peppers (chopped) Feel free to switch up the bell peppers for any veggies you prefer.
  • 10.5 oz can cream of chicken soup
Spices
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper Adds a spicy kick.
  • 1 tsp garlic powder
Garnish
  • 0.25 cup green onions (sliced) For garnish before serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a large casserole dish.
  2. In a large pot, cook the chicken over medium heat for about 6-7 minutes on each side until it’s golden and cooked through.
  3. Meanwhile, boil a pot of salted water and cook the spaghetti until al dente, about 8-10 minutes. Drain and set aside.
Mixing
  1. In a large mixing bowl, combine the shredded chicken, cooked spaghetti, cream of chicken soup, chopped bell peppers, spices, and half of the cheddar cheese. Mix until well combined.
Baking
  1. Transfer the mixture into the greased casserole dish and sprinkle the remaining cheese on top.
  2. Bake for 25-30 minutes or until bubbly and golden brown.
  3. Allow the casserole to rest for 5 minutes before garnishing with chopped green onions and serving.

Notes

This casserole pairs excellently with a side salad or garlic bread. Consider adding a dollop of sour cream or a sprinkle of crushed red pepper on top for added flavor.
