  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened Let sit at room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed hard candies (like Jolly Ranchers), in assorted colors You can swap for any flavors you prefer

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In another bowl, cream the softened butter and granulated sugar until the mixture is light and fluffy (about 3-5 minutes).
  4. Beat in the egg and vanilla extract, mixing until thoroughly combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  7. After chilling, roll out the dough on a floured surface to about 1/4-inch thickness, then cut out your desired shapes.
  8. Use a smaller cookie cutter to cut out the center of each cookie.
  9. Place the cookies on a baking sheet and fill the center cutouts with the crushed hard candies.
  10. Bake for 8-10 minutes or until the edges turn lightly golden.
  11. Allow the cookies to cool completely on the baking sheet before transferring them.
