Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, and salt.
- In another bowl, cream the softened butter and granulated sugar until fluffy.
- Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Roll the dough into balls and flatten them slightly; place a teaspoon of strawberry jam in the center of half the cookies.
- Top with the remaining cookies and seal the edges gently.
Baking
- Bake for 10-12 minutes, or until they turn a lovely shade of light golden.
- Let cookies cool.
Frosting
- Whisk together the heavy cream and powdered sugar until smooth.
- Frost the cooled cookies and generously sprinkle with colorful sprinkles.
