Ingredients
  

Cookie Base
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened Ensure butter is softened, not melted.
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup strawberry jam Can substitute with raspberry or apricot.
  • 1/4 cup heavy cream
  • 2 cups powdered sugar
  • 1 cup colorful sprinkles For topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Roll the dough into balls and flatten them slightly; place a teaspoon of strawberry jam in the center of half the cookies.
  7. Top with the remaining cookies and seal the edges gently.
Baking
  1. Bake for 10-12 minutes, or until they turn a lovely shade of light golden.
  2. Let cookies cool.
Frosting
  1. Whisk together the heavy cream and powdered sugar until smooth.
  2. Frost the cooled cookies and generously sprinkle with colorful sprinkles.
