  • 1 cup seasoned corn Can use canned or frozen corn.
  • 2 cups cooked rice Cook according to package instructions.
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced onion
  • 1 piece avocado, sliced For topping.
  • to taste salt and pepper
  • to taste chili powder
Garnishes
  • fresh cilantro Fresh cilantro for garnish
  • lime wedges Lime wedges for serving Add a zesty kick.

Method
 

Preparation
  1. Cook rice according to package instructions.
  2. Season and grill the chicken breasts until cooked through, then slice.
  3. In a bowl, combine the seasoned corn, diced red bell pepper, and onion.
Assembly
  1. Assemble the bowls by placing a scoop of rice at the bottom.
  2. Top with sliced chicken, seasoned corn mixture, and avocado slices.
  3. Garnish with fresh cilantro, lime wedges, and season with salt, pepper, and chili powder as desired.
  4. Serve immediately.

Notes
