Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with butter or cooking spray.
  2. In a bowl, whisk together the eggs, milk, flour, baking powder, salt, and pepper until the mixture is smooth.
  3. Line the bottom of the greased baking dish with half the roasted green chiles, spreading them evenly.
  4. Sprinkle half the Monterey Jack and cheddar cheeses over the chiles.
  5. Add the remaining chiles on top, followed by the rest of the cheese.
  6. Pour the egg mixture evenly over the layers in the dish.
  7. Bake uncovered for 30–35 minutes or until the top is golden and the center is fully set.
  8. Let it rest for at least 10 minutes before slicing to help it firm up.
