  • 1 cup rice (white or brown)
  • 1 can diced tomatoes (with juice)
  • 2 cups bell peppers, chopped (a mix of colors for visual appeal)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning

  • 2 cups beef broth or water

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef with the chopped onion and minced garlic until browned. Drain excess fat.
  3. Add chopped bell peppers, rice, diced tomatoes (with juice), beef broth, and seasonings. Stir to combine.
  4. Bring to a simmer and let cook for about 5 minutes.
  5. Pour the mixture into a greased baking dish and top with shredded cheese.
  6. Cover with aluminum foil and bake for 25 minutes.
  7. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  8. Allow to cool slightly before serving.
