  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 1/2 cup feta cheese, crumbled Can substitute for goat cheese.
  • 4 cups mixed greens Any combination of greens can be used.
Dressing and Seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes. Toss them with olive oil, salt, and pepper until evenly coated.
  3. Spread the sweet potato cubes on a baking sheet and roast for about 25-30 minutes, or until they are tender and slightly caramelized.
  4. Allow the sweet potatoes to cool for a few moments while you prepare the rest of the salad.
Assembly
  1. In a large salad bowl, combine the mixed greens, roasted sweet potatoes, diced avocado, and crumbled feta cheese.
  2. Drizzle with lemon juice, add a sprinkle of salt and pepper, and toss gently to combine everything evenly.
  3. Serve immediately or refrigerate until ready to serve.

Notes
